Dried fruit of Dialium indum, also known as velvet tamarind or keranji. These small, round fruits have a hard, velvety brown shell that cracks open to reveal a sticky, sweet-sour orange pulp inside. The flavor is uniquely complex - sweet, tangy, and slightly smoky with notes of raisins and apricots.
